Bring to a boil, then reduce to a simmer and cook for 15\u201320 minutes, or until the potatoes are fork-tender. While the potatoes cook, heat the Lactantia\u00ae lactose-free milk and butter in a small saucepan over low heat until the butter is melted and the mixture is warm. Do not boil. Drain the cooked potatoes and return them to the pot or place in a large bowl. Mash the potatoes with a potato masher. Slowly stir in the warm milk and butter mixture. Add the garlic and onion and cook for 2-3 minutes, or until fragrant. Add the butternut squash and carrots and cook for 4-5 minutes or until they begin to soften. Add the apples, vegetable stock and milk and bring this to a boil. Reduce the heat to low and let it simmer for 10 minutes or until the butternut squash and apple is cooked through. Add the canned lentils, cinnamon, ginger and sage and cook for an additional 5 minutes. Turn off the burner and remove the pot from the heat. Using an immersion blender, blend the soup until smooth and creamy. Season with salt and pepper and top with pumpkin seeds (optional). In a large bowl, use a hand mixer to blend together the eggs, corn syrup, brown sugar, butter, vanilla, salt and cinnamon until smooth. Add the chopped pecans to the unbaked pie crust. Pour the batter on top of the nuts. The pecans should float to the top and disperse evenly. Bake for 50-55 min or until the top is lightly browned. The pie will jiggle slightly in the middle but it will set as it cools. While the pie is baking, pour the whipping cream into a cold glass bowl, add the sugar and mix on medium-high speed until thick (about 2-3 minutes), until soft peaks form. In a large bowl, combine the eggs, pumpkin puree and olive oil and whisk for about 1 minute or until it lightens in colour. In a separate bowl, combine the flour, sugar, pumpkin pie spice, baking soda, baking powder, and salt. Gently fold the dry ingredients into the wet mixture until just combined. Pour the batter into your prepared cake pan and bake for 35-40 minutes or until an inserted toothpick comes out clean. To make the vanilla glaze, in a small bowl, add the icing sugar, lactose-free milk and vanilla extract. Using a whisk, mix this together until smooth. If you prefer a thinner consistency, add more milk 1 tsp at a time. If you want a thicker glaze, add more icing sugar, 1 tbsp at a time. Let the cake cool for 15-20 minutes, remove from the pan and drizzle the vanilla glaze on top.
